Our mate Theresa would have a number of specialities. We would identify her with two. The first is cooking in exotic locations, the second is her chocolate fudge dessert.
As for the first speciality, Theresa came to our parts some years ago as a chef on a boat called Tits. Later she ran the wonderful Chukka Cafe on the sidelines of Polo Field No. 3 at Jerudong. One of the highlights of dinner was staying long enough to see the dew grow in the moonlight-dappled expanse of lawn. Then she cooked right on the beach in Jerudong. She had a real fairy lights and sand between the toes gig going for a while.
She now works at the place out on the river in Kota Batu. The view satisfies all your heart of darkness fantasies. You can eat on the terrace overlooking a deep green river, lightly trafficked. On the opposite bank, thick mangrove rises to forested hills. It is a vista unchanged for generations.
Her other speciality is the Chocolate Fudge. Not quite a souffle-definitely not a pudding, but all in all a chocolate fudge WINNER. It's a sort of steamed chocolate fudge souffle but not as light. As I understand it, it involves baking a ramekin of oozy chocolate in a tray half-filled with water. It is a fudgingly, drippingly, good chocolate dessert. As far as accompaniments go, the best they do is a drizzle of strawberry sauce and a scoop of ice-cream. In some places, it would be served with pistachio ice-cream and white truffle foam and you'd pay 50 bucks.
But you wouldn't be able to beat the view.
